Job Description

SCOPE OF JOB

The scope of this role is to lead and oversee the kitchen team, manage and organize all requirements for the smooth and efficient operation of all kitchen activities, in accordance with the standards of operating procedures.

Reports to:

Executive Chef

 Main responsibilities:

Determine food inventory stocking, storing and ordering needs

Create and execute menu items as per recipe cards

Develop new dishes ensuring variety and quality and cost control

Direct the food preparation process of all sections ensuring all food is prepared with the highest quality timely and consistently

Establish staff schedules

Design and deliver banqueting menus and service upon request

Conduct on the job training sessions for the kitchen team

Inspect all kitchen areas for appropriate maintenance to ensure a safe work environment

Ensuring HACCP and Health & Safety policies and procedures are implemented and maintained

Create and follow standards of operating procedures

Attend job specific trainings to further improve skills & knowledge

Conduct team briefings and communication meetings consistently

Level of Experience

  • At least 5 years’ experience in similar position in 5* Restaurants or Hotels 
  • Culinary Degree for the relevant position
  • Awareness of Control of Substances Hazardous to Health Regulations (COSHH)
