Columbia Restaurants Company LTD, an exceptional company with over 20 years’ experience in great food in Cyprus, is seeking to recruit for Columbia Sun, its highly anticipated seafront restaurant in Limassol, for the following position:

Job Brief:

The Sous Chef assists the Executive Chef in all their duties and responsibilities and is called to replace them as the head of kitchen outlet whenever they are absent.

Job Description:

  • Providing functional assistance and direction to the kitchen operation as assigned
  • Assisting the Executive Chef in supervising the functioning of all kitchen employees, facilities and costs to ensure maximum F&B department profit is achieved
  • Establishing staff rota
  • Assisting the Executive Chef in controlling and analysing the following on an on-going basis:
  1. Quality levels of production and presentation in their respective areas
  2. Guest satisfaction
  3. Cleanliness, sanitation and hygiene
  4. Optimum performance in all of the above areas as assigned
  • Assisting the Executive Chef in the production, preparation and presentation of all food items to ensure the highest quality at all times
  • Assisting in maintaining effective employee relations
  • Assisting with banqueting when required
  • Assisting the Executive Chef in conducting formal and on-the- job training sessions for kitchen employees
  • Assisting the Executive Chef in the completion of market lists in accordance with Columbia Sun quality and quantity standards
  • Checking perishable food items received for quantity and quality standards
  • Informing the Executive Chef on a daily basis regarding all relevant operational and personal matters, including information which does not require the Executive Chef’s action
  • Assisting the Executive Chef with inspections of physical aspects of all kitchen areas, cold rooms and equipment
  • Providing hands-on supervision and assistance in all kitchen areas assigned by the Executive Chef
  • Performing related duties and special projects as assigned
  • Following the kitchen manual and standard operating procedures and respecting CERS procedures
  • Respecting the core values of the Columbia Sun experience
  • Respecting health and safety discipline standards
  • Ensuring that HACCP standards are consistently adhered to in the section

Requirements:

  • Experience in a relevant position in high-end restaurants or luxury 5* hotels
  • Prior experience in a fish restaurant
  • Culinary Degree
  • In-depth knowledge of food principles and best practices
  • Passion for creating incredible food that delights and attracts customers
  • Excellent communication skills and leadership qualities
  • Ability to thrive in a high-pressure environment
  • Creative, innovative thinking
  • Exceptional standards of cleanliness, health and safety
