Job Brief:

The Commis Chef assists the Demi Chef de Partie and Chef de Partie in the production of quality food.

Job Description

Responsibilities and duties for this position shall include, but not be limited to, the following areas and activities. At management’s discretion, direction may be given for tasks outside the scope of work described.

  • Developing skills in cooking, training of other staff and always maintaining a positive attitude
  • Work whenever and wherever required within all areas of the kitchen
  • Listening carefully to instructions given by senior staff and carrying out duties in a responsible, timely manner without hesitation
  • Preparation and serving of food with an emphasis on quality, freshness and timing
  • Assisting and monitoring cleaning procedures and hygiene practices in accordance with HACCP requirements
  • Checking daily food requisitions and maintaining stock level control to prevent waste
  • Ensuring all kitchen equipment is well maintained and regularly checked, reporting any problems to the Demi Chef de Partie for maintenance
  • Reporting for duty on time and in the correct uniform provided
  • Following the kitchen manual and standard operating procedures and respecting CERS procedures
  • Monitoring stock movement and being responsible for their section
  • Ensuring knowledge of products is maintained and communicated to all relevant staff members
  • Responsible for completing their MEP lists and PAR levels
  • Learning and recording skills and recipes from other members of the department
  • Complying with all policies and procedures to ensure that they are followed
  • Being flexible and willing to help all areas of the kitchen without direction
  • Respecting the core values of the Columbia Sun experience
  • Respecting health and safety discipline standards
  • Strictly following recipes and technical data sheets, as well as menus and presentations
  • Ensuring that HACCP standards are consistently adhered to in the section


  • Experience in a relevant position in high-end restaurants or luxury 5* hotels
  • Culinary Degree
  • Passion for creating incredible food that delights and attracts customers
  • Ability to thrive in a high-pressure environment
  • Exceptional standards of cleanliness, health and safety
