Columbia Restaurants Company LTD, an exceptional company with over 20 years’ experience in great food in Cyprus, is seeking to recruit for Columbia Sun, its highly anticipated seafront restaurant in Limassol, for the following position:

Job Brief:

 

The Chef de Partie assists the Sous Chef in leading, managing and organising all requirements for their respective kitchen to the highest standard and in accordance to the standard operating procedures as determined by the Executive Chef. Ensures proper sanitation.

Job Description:

Responsibilities and duties for this position shall include, but not be limited to, the following areas and activities. At management’s discretion, direction may be given for tasks outside the scope of work described.

  • Ensuring that all food meets the highest quality standards and is served on time
  • May replace the Sous Chef when absent
  • Responsible for a selection of tasks, as required by the Sous Chef
  • Keeping their working area tidy, clean and sanitised
  • Cleaning their working area after the preparation of each dish
  • Covering all dishes with foil or film wrap before entering the cold room to prevent bacterial growth
  • Helping the Sous Chef when asked to do so
  • Supervising and training all kitchen staff in their daily duties
  • Ensuring the kitchen is generally clean and tidy before departing
  • At the end of shift, ensuring that equipment used is cleaned and in good working condition and reporting any malfunction to the Sous Chef
  • Helping other cooks in any department when asked to do so
  • Clearing all unused MEP and ensuring the safe and hygienic storage of all leftovers in the appropriate place
  • Ensuring completion of MEP before service
  • Preparing and/or assisting in the preparation of food items as per the Executive Chef or Sous Chef’s orders
  • Producing dishes as per recipes, photos and set standards
  • Ensuring the cleanliness of working areas
  • Maintaining a safe work environment and reporting and/or rectifying safety hazards
  • Performing any other duties as may be assigned by the Executive Chef or Sous Chef
  • Following the kitchen manual and standard operating procedures and respecting CERS procedures
  • Respecting the core values of the Columbia Sun experience
  • Respecting health and safety discipline standards
  • Ensuring that HACCP standards are consistently adhered to in the section

 

Requirements:

  • Experience in a relevant position in high-end restaurants or luxury 5* hotels
  • Prior experience in a fish restaurant
  • Culinary Degree
  • In-depth knowledge of food principles and best practices
  • Passion for creating incredible food that delights and attracts customers
  • Excellent communication skills and leadership qualities
  • Ability to thrive in a high-pressure environment
  • Creative, innovative thinking
  • Exceptional standards of cleanliness, health and safety
