SCOPE OF JOB

The scope of this role is to ensure that all preparation of his designated section is ready for service and run to the highest standards as set by the Executive Chef.

Reports to: Sous Chef

 Main responsibilities:

  • Ensuring that all food is prepared with the highest quality standards and is served on time.
  • Support and replace the Sous Chef in his/her absence.
  • Responsible for maintaining tidy & clean working areas.
  • Preparing workstations ready for operation as per standards
  • Ensure good stock and waste control is practiced
  • Ensure completion of M.E.P before service.
  • Produce dishes as per recipes, photos and set standards.
  • Delegate and supervise jobs to commit chefs and support them in their development
  • Maintain a safe work environment. Report and/or rectify safety hazards.
  • Follow kitchen Manual and SOPs and respect CERS procedures.
  • Ensuring HACCP and Health & Safety policies and procedures are implemented and maintained
  • Attend job specific trainings
  • Attend team briefing and communication meetings

  • Fluent in Greek and English
  • Excellent communication skills and leadership qualities.

  • Good knowledge of health & safety, hygiene and licensing regulations

Level of Experience

  • At least 4 years’ experience in relevant position in High End Restaurants or Luxury 5 * Hotels 
  • Culinary Degree
  • Proven in-depth knowledge of food principles and best practices.
  • Proven knowledge of Health & Safety standards.
